Ingredients needed

  • Butter. 
  • Garlic. 
  • Rosemary. 
  • Cream.
  • Lemon juice. 
  • Gorgonzola cheese. You could use any blue cheese but I love Gorgonzola’s creaminess.
  • Salt and pepper. 
  • Steak. I used rib-eye but you could use rump, sirloin, etc.

How to make Gorgonzola sauce

  1. Saute the aromatics: Soften a few cloves of crushed or minced garlic in a tablespoon of butter. Do this over medium-low heat so that the garlic doesn’t burn. Add a sprig of rosemary to infuse the sauce. Sage and thyme are also excellent partners for Gorgonzola.
  2. Cook the sauce: Add cream and a squeeze of lemon juice. Allow the sauce to simmer until it covers the back of a spoon easily. Use heavy or whipping cream here as you want the sauce to thicken as it cooks without needing to add flour or starch.
  3. Add the cheese and finish: Remove the sauce from the heat and stir in the crumbled Gorgonzola cheese. Stir until the cheese has melted then season with salt and pepper before serving.

Ingredients

For the Gorgonzola sauce

  • 2 tbsp butter
  • 3 garlic cloves crushed/minced
  • 1 sprig rosemary
  • cups cream
  • 1 tsp lemon juice
  • 100 g (3½oz) Gorgonzola crumbled
  • salt and pepper to taste

For the steak

  • 4 rib-eye steaks
  • salt and pepper to taste
  • 2 tbsp butter
  • 2 sprigs rosemary
  • 2 garlic cloves halved

Instructions

  • To make the sauce, melt the butter in a pan set over medium-low heat.
  • Add the garlic and rosemary and cook until the garlic softens. (Approximately 1-2 minutes)
  • Pour in the cream and lemon juice.
  • Allow to simmer for 5 minutes until the sauce has thickened slightly and coats the back of a spoon.
  • Remove from the heat and add the cheese. Stir until the cheese has melted then season to taste with salt and pepper.
  • To make the steak, pat the steak dry with paper towels then season generously with salt.
  • Heat a large cast iron pan or griddle pan over high heat.
  • Add the steaks and cook until well-browned on both sides. Once flipped, add the butter, garlic and rosemary and baste the steak with the butter. I cook my steaks for 2-3 minutes per side until they are medium rare.
  • Remove from the pan and allow to rest for at least 5 minutes before serving with the Gorgonzola sauce.
