Choc-Chilli Cake

I am the type of person who believes that fattening foods shouldn’t be tampered with. I don’t like the idea of low-fat Macaroni & Cheese or Diet burgers and chips. I think there is a reason that these things are so fattening, you are only meant to be eating them once every 2-3 months. Making them low-fat/low-sugar etc. takes the indulgence away. But I did a shoot for Avocado Magazine last week and I was asked to develop baking recipes for special diets. Lactose intolerant, gluten intolerant, diabetic, etc. I cam across the most amazing yoghurt cake recipe that is so low in fat but is probably the most moist and delicious cake I have ever eaten, no jokes! The only fat in this recipe comes from the canola oil used, which is, in my opinion, completely guilt-free as it’s good for your heart.

I thought long and hard about how I could transform this delicious yogurt cake recipe into other flavours (you’ll have to wait for the March/April issue of Avocado to see the flavour I used originally) and I thought about maybe trying a chocolate version. Now, for me, chocolate cake is quite a tricky thing because it can be dry VERY easily. But, yet again, the yogurt and tiny bit of oil in this recipe made it absolutely scrumptious and moist.

You could serve this with chocolate buttercream frosting, but that would obviously up the fat content quite a bit so I just made a chocolate ganache with reduced fat cream. Indulgent and almost guilt-free, what more could you ask for?

Makes 1 standard sized cake

200g dark chocolate, melted
200g fat-free, Bulgarian yogurt
50ml vegetable oil
150g soft brown sugar (I used demerara)
100g ground almonds
10ml dried chilli flakes
30ml cocoa powder
50g dessicated coconut
4 large eggs
140g cake flour
10ml baking powder

100g dark chocolate
50ml reduced fat cream

  • Preheat the oven to 180ºC and grease and line a cake pan with baking paper.
  • Combine the melted chocolate, yogurt, vegetable oil, sugar, ground almonds, chilli flakes, coconut and cocoa powder in a food processor. Blend until smooth.
  • Add the eggs one by one whilst blending. Add the cake flour and baking powder, blend until well incorporated.
  • Pour the batter into the prepared tin and bake for 20-25 minutes until a skewer inserted comes out clean.
  • Melt the chocolate and pour in the cream, beat well. If it’s too thick add a bit of warmed milk and mix through. The mixture might become lumpy, just microwave for 30 seconds until smooth.
  • Pour the ganache over the cake.

    I seriously need some help – bookclub 27 October – approximately 9 -10 girls. I need a meal to make, that is easy and yummy and will make me appear like a kitchen goddess – which I am not.
    My knee jerk reaction is a chicken something and a salad something. I have got http://www.chefsam.co.za to do some cupcakes for me with bookworms/books on them. Can you offer any good ideas what to make.
    Bear in mind, I work full day, fly home get home at 5 – 5:30pm, grab kids, and trying to get them fed, bathed and into bed by 7pm, and book club girls normally rock up between 7 – 7:30pm, so I have little time, and need to pull a miracle – still allowing me time to uncork and drink at least one glass of wine before they arrive.

      RM : Go to my chicken recipes and have a look there. The chicken, potato and tomato tray bake takes 30 minutes to bake and then you just toss a salad through it. If you need more help, e-mail me directly! :)

    I once had a friend chef who told me about these miracle chocolate brownies he made that didn’t have any sugar or chocolate (beside one dollop of lindt on the top). I am a chocolate-holic. My friend brought me two 200gm slabs of chocolate from Serbia (a mix of mousse, nougat and nuts and milk chocolate on the exterior)… anyway. I finished those and 100gm of Lindt slab my dad bought me (in three days).

    So.. anyway… point is, I indulge. Those damn ‘non-fattening’ brownies were crap. I hate it when the decadence is taken away. :D And I totally agree. I wouldn’t sacrifice the flavour but rather eat it in moderation…

    THIS, however, looks soooooooo gooood. The yogurt really draws me in because I’ve never tried that in a cake. My favourite chocolate cake recipe requires 500gm of chocolate (but it’s so good, seriously >.<). I'm gonna try this on Thursday. Haha… by the way, I've made five of your dishes so far and my family constantly go, 'Mmmmm! This is so good.'. Thanks =)

      lol!! Well these are obviously not AS good as VERY fattening cake, I mean the butter and chocolate obviously adds to the taste, but they are very good. And you could also chop this up and serve with the low fat ganache and some reduced fat cream. Oh yumm!!!
