Bacon & Chilli Pasta

I was so not in the mood to cook dinner last night. All I wanted to do was watch Oprah (yes, I watch Oprah…stop judging!) and do nothing. But I got off my lazy bum and threw together, what I thought would be quite a boring and bland pasta. Well, it wasn’t! It was actually really, flipping good. Don’t you just love that? When you think your dinner is going to be boring and it turns out to be something quite fab?

There’s not much to be said about this dish, other than it took me literally 22 minutes from doing nothing, to having it on the plate. I walked into the kitchen at 17h25 and I dished up at 17h47. I kid you not. I think I was kind of inspired by Jamie’s 30 Minute Meals again because I was multi-tasking like a real pro. I was quite impressed with myself actually. I just wish there was someone in the kitchen with me so I didn’t have to sound like I was lying when I said I was chopping and sauteing like a pro!

I served the pasta with some Woolies heat up Ciabatta to mop up all the sweet and spicy juices but having some salad with this would’ve also been really delish. Easy, fuss-free dinner? This is it baby!!

Bacon & Chilli Pasta

Serves 4:

500g fussili (or pasta shape of your choice)
500g bacon (2 packets), chopped
1 large onion
3 garlic cloves
1 tin chopped tomatoes
fresh/minced chillies (enough to make it spicy but still palatable)
2tbsn sweet chilli sauce
2tbsn fat-free plain yoghurt
salt & pepper to taste

Fresh pecorino/parmesan to serve
Fresh Italian parsley , to serve

  • Fill a large pot with water, add 2tbsn salt and allow to come to a boil.
  • While you wait for the water to boil, heat a large saucepan and fry the bacon until cooked and slightly crispy. While the bacon is frying, finely chop the onion and garlic.
  • Remove the bacon from the pan and set aside.
  • Fry the onion and garlic in the same pan until soft and translucent. Add the tinned tomatoes, chillies and sweet chilli sauce. At this point your pasta should be cooking so drop the pasta into the boiling water and allow to come back up to a boil.
  • Allow for the tomato sauce to reduce slightly then add back the bacon. Allow to simmer for 2-3 minutes then turn off the heat and add the yoghurt and season to taste.
  • Drain the cooked pasta and toss into the sauce.
  • Serve with a scattering of grated pecorino and some italian parsley.

    I dont eat bacon, but the fat free yoghurt grabs my attention. I’m sure I could use chicken rashers instead?
