Quick and Easy Prosciutto Melon Salad with Mozzarella

Ingredients

  • Melon. I used Cantaloupe but Honeydew melon will also work.
  • Prosciutto. 
  • Mozzarella. I used bocconcini but any fresh mozzarella will work.
  • Arugula / Rocket. 
  • Olive oil.
  • Fresh lemon juice.
  • Salt and pepper.

How to make Prosciutto Melon salad

  1. Prepare the ingredients: Halve the melon then scoop out the seeds. Using a melon baller, scoop balls of melon out and place in a bowl. Alternatively, chop the melon into cubes.
  2. Make the dressing: Whisk together the olive oil, lemon juice, salt and pepper.
  3. Make the salad: Place a bed of arugula/rocket into a serving bowl then add the melon balls and mozzarella. Add the prosciutto. Pour over the dressing and serve.

Can I make this ahead?

The melon can be balled and place in an airtight container the day before serving. The salad can be assembled (undressed) up to 2 hours in advance and kept covered in the fridge. Dress before serving.

  • 150 g (5oz) prosciutto
  • 300 g (10oz) mozzarella / Bocconcini
  • 3 cups arugula/rocket

For the dressing

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • salt and pepper to taste
