Are you ready for some chicken Caesar magic? Because this might look like a normal chicken Caesar sandwich but that creamy dressing you see right there? It’s not quite what you think it is.

A few months ago I was browsing YouTube (which is totally an addiction of mine, btw) and came across a delectable chicken Caesar salad by everyone’s favourite, Jamie Oliver. Now, Jamie can do no wrong in my book and when I saw how he made a lightened up but still totally indulgent Caesar dressing, I loved him just that little bit more. Jamie uses plain yoghurt instead of the classic egg and oil base to create a really luscious, creamy dressing which is a) quicker and b) so much healthier. Plus it doesn’t compromise on flavour at.all!

And really, this is the exact salad just turned on its head. Juicy chicken, crispy lettuce, crunchy bread, luscious dressing. All there. Except now you can pick it up with your hands and shove it right in your mouth, where it’s meant to be. We’re all winners in this scenario. Plus, if you swap the ciabatta for some good-for-you wholegrain bread, you have pretty much nothing to feel guilty about. Yes please and thank you!

Ingredients

for the Caesar dressing

  • ½ cup Greek yoghurt
  • 3 anchovy fillets finely chopped
  • ½ garlic clove minced
  • handful finely grated Parmesan cheese
  • juice and zest of ½ lemon
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon olive oil
  • salt & pepper to taste

for the chicken

  • 4 boneless skinless chicken breasts
  • juice and zest of ½ lemon
  • 3 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons chopped parsley
  • generous pinch of salt and pepper

for the sandwich

  • bread of your choice
  • cos lettuce leaves
  • avocado sliced

Instructions

  • To make the dressing, whisk together all the ingredients and set aside.
  • Combine all the marinade ingredients for the chicken and mix well. Pour over the chicken and allow to marinate for 10 minutes.
  • Heat a griddle pan over high heat and cook the chicken on both sides until cooked through.
  • Remove and allow to rest for 5 minutes.
  • Griddle the bread until toasted.
  • To assemble the sandwich, spread a slice of bread with a generous spoonful of the dressing topped with lettuce, sliced chicken and avocado. Sandwich with another slice of bread and serve.
