Lamb Chops with Salsa Verde

I  am a very big fan of Salsa Verde. I love the versatility of it and I love that it literally takes 5 minutes to do. I usually serve it with fish but last night I decided to try it with grilled Lamb Chops and it was AMAZING! The natural sweetness of the Lamb works so well with the flavours of the Salsa Verde. Definitely a winner!!

I just marinated the Lamb Chops in some Lemon Juice, Lemon rind, oil and salt and then grilled them on my griddle pan until they were still pink inside (about 3 minutes a side..they were quite small lamb chops). And served them with Smashed potatoes and a mixed salad.


Salsa Verde:

1 cup Flat leaf parsley, finely chopped
1/2 cup Basil, Finely Chopped
2tsp garlic, crushed
1tbsn Anchovy fillets, finely chopped
1 cup gherkins, finely chopped
2 chillies, deseeded and finely chopped
2tsp Dijon or Wholegrain mustard
2 tsp White Wine Vinegar
1tbsn Lemon Juice
1tbsn pickling juice from Gherkins
Salt & Pepper to taste
