Smoked Snoek Quiche to show my gratitude!

So last week Monday, I thanked all of you for voting me into the top 2 of both the New Blog and Food & Wine blog categories! And today, I have to jump up and down, wave my arms, scream as loud as I can!! THANK YOU THANK THANK YOU THANK YOU THANK YOU!!! Not only did I win Best Food & Wine Blog, but I also won Best New Blog! And I could not have done it without the support of my amazing readers. I think this is even more special to me because last year this time, I had no idea what to do with my life. I was constantly depressed about not knowing where my life was going. I had 2 mouths to feed and as much as I wanted to, I could not go back into the fashion industry, which was always my dream. I had studied Make-up Artistry/Design and Hair styling and had some impressive clients when I fell pregnant. I couldn’t carry on doing what I loved so much while carrying twins and by the time I was ready to go back to work, new people had come into the industry and I was told I would need to start from the bottom, and with 6-month old twins I couldn’t do that.

And then I started blogging. I started my blog because family and friends were constantly asking me to e-mail my recipes to them and I was getting sick of e-mailing 20 different people 20 different recipes every week, so I decided to post them all on a blog, really not expecting much. I started taking photo’s (very, very BAD photo’s) of my dishes and got more and more into it. For years my family and friends were saying I should’ve become a chef but I never found the idea of working long hours in a kitchen very appealing. Especially not since I saw how rude some customers can be.

And then something happened, I got more into the styling and photography, I started reading about all of this and became even more obsessed with food (if that’s even possible!) And slowly but surely things started changing. I became noticed and one of my recipes actually made it into a newspaper. Then my incredible husband said I should register my own domain, so I did. And from there, things just got better and better. We then changed the lay-out which is probably the best decision we’ve ever made and work just started streaming in. I was asked to do food-demo’s and styling for magazines. My dreams were coming true. And now this! I couldn’t be happier. So once again, I have to say THANK YOU to all of you. I am constantly trying to improve my blog and if you have any ideas for me, please let me know. And please don’t stop reading and commenting. Your comments make my day!

And now for the delicious Smoked Snoek Quiche I made. This really is such an easy and great recipe for warm Summer evenings, made easier by using ready-made puff pastry (I always have a few rolls in my freezer). Not much has to be said about this recipe, other than it being absolutely delicious and something everyone will love. My almost 2-year old twins both ate a whole one each!

Smoked Snoek Quiche

Makes 6 individual quiches or 1 standard large quiche (I baked the small quiches in Jumbo muffin trays)

1 roll, ready-made puff pastry
1 red onion, finely chopped
2 garlic cloves, crushed
2tsp paprika
1tsp seafood/fish spice
500g smoked snoek
2 cups grated mature cheddar cheese
3 eggs
250ml cream
2tbsn fresh parsley, finely chopped
salt & black pepper to taste

  • Roll out the puff pastry on a floured surface and cut to fit into the dish of your choice. (remember to grease the dish before hand). Gently press the pastry into the baking dish.
  • Fry the onion and garlic gently for 4-5 minutes until soft and translucent. Add the seasonings, snoek, cheese and parsley. Spoon the mixture on top of the pastry.
  • Beat together the eggs, cream, salt & pepper. Pour over the filling.
  • Bake in a 180ΒΊC, pre-heated oven until the filling is set but still slightly jiggly in the middle and the pastry is nice and golden.
  • Allow to cool down to room temperature and serve with salad.

      Hi Jennifer. Thanks for your lovely comment. Snoek is a smoked fish and is quite unique but you could substitute it for any smoked fish you can get your hands on. πŸ™‚
