Spicy garlic shrimp skewers

Grilled shrimp skewers marinated in chilli, garlic and spices are delicious as an easy appetizer or a light dinner served with salad.

Ingredients needed

  • Shrimp / Prawns. I prefer to peel the shrimp to make sure the marinade as has much opportunity to flavor the meat but this is optional.
  • Olive oil.
  • Fresh chillies. I used bird’s eye / Thai chillies but any fresh chilli you can find will be delicious.
  • Garlic.Β 
  • Paprika.
  • Fresh lemon juice.Β 
  • Honey.Β This is optional but I like the slight sweetness it adds.
  • Salt and pepper.

How to grill shrimp skewers

  1. Soak bamboo skewers in boiling water for at least 30 minutes.
  2. Make the marinade:Β Combine olive oil, lemon juice, garlic, chillies, paprika, honey, salt and pepper in a blender/food processor and blend until smooth. Peel and devein the shrimp and place in a large bowl. Pour over the marinade and allow to marinade for 10-20 minutes.
  3. Assemble the skewers: Remove the skewers from water. Skewer 3 shrimp, starting with the tail and pushing through the top to make sure they are secure on the skewers.
  4. How long to grill shrimp skewers: Preheat the grill on high for 5 minutes. Add the skewers and cook for 1-2 minutes per side or until the shrimp are caramelized and opaque. Remove from the grill and serve with lemon wedges.

Ingredients

  • ΒΌ cup olive oil
  • 1-2 red chillies roughly chopped (remove the seeds if you want it less spicy)
  • 3 garlic cloves peeled
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 500 g peeled and deveined shrimp / prawns

Instructions

  • Soak bamboo skewers in boiling water for at least 30 minutes.
  • Combine the oil, honey, soy sauce, lemon, chillies, garlic and salt in a blender or food processor (you can use an immersion blender too) and blend until smooth.
  • Place the shrimp in a bowl then pour over the marinade. Mix to make sure the prawns are covered then allow to marinade for 10-20 minutes.
  • Thread the shrimp onto the skewers, pushing the skewer first through the tail and then through the thicker part to ensure they are secure on the skewers. Brush each skewers with marinade.
  • Preheat the grill for 5 minutes on high heat. Add the skewers and cook for 1-2 minutes per side until the shrimp are caramelized and opaque.
  • Remove from the grill and serve with lemon wedges.
