Ingredients
½
lb / 250g
bacon
finely chopped
2
lb / 1kg
brussels sprouts
halved and trimmed
1
cup / 250ml
chicken stock / vegetable stock
salt and black pepper
to taste
1-2
tbsp
lemon juice
to taste
Instructions
In a large skillet/pan set over medium-high heat, fry the bacon until crisp and golden.
Remove from the pan with a slotted spoon and set aside. Pour off the bacon grease, leaving 2 tablespoons behind.
Add the brussels sprouts to the pan and cook until golden brown, tossing every few minutes to ensure even browning.
Pour in the stock and season to taste then partially cover and allow to simmer gently for 5 minutes.
Remove the lid then simmer until the stock has evaporated and the sprouts are tender but not mushy.
Add the crispy bacon back to the pan then season with salt, pepper and lemon juice.
Serve.
