Ingredients
1
large English cucumber
coarsely grated
zest and juice of 1 lemon
1
garlic clove
finely chopped
small handful fresh mint leaves
finely chopped

cups
Greek yoghurt
salt & pepper to taste
olive oil
to serve
Instructions
Grate the cucumber and squeeze out excess liquid (through a sieve or a piece of muslin).
Place in a bowl and add all the other ingredients.
Stir to combine and serve. (Can be made up to 3 hours in advance, keep covered in the fridge.)
