Braai Week part 3 – Side Dishes
I know that the meat is the most important part of the braai, and I don’t know if this is just because I’m a woman, but my favourite part of the braai has to be all the side dishes. Sweet, buttered mielies with chilli (corn on the cob), creamy potato bake and crispy, toasty braai broodjies (directly translated – Barbecue sandwiches) are just some of my favourites. And then you HAVE to have a great salad.
In most Afrikaans households, it’s usually a mixed salad. Lettuce, cucumber, tomatoes, feta cheese, olives, baby corn, sugar snap peas…anything goes. But my all time favourite salad for a braai HAS to be a good Greek Salad. I gave mine a slight twist my marinating the Feta (going along with the marinating from the previous two days of course) and it came out absolutely incredible. It doesn’t make the salad unrecognisable but it just adds a bit of interest.
But quite honestly, any braai is a good braai when you have good company and loads of booze. Even a few lettuce leaves and a fresh bread would do, but if you want to impress your guests, why not try some of these fabulous sides?
Greek salad with marinated Feta
The amounts aren’t specific for this salad. Just toss some lettuce, chopped cucumber, some cherry tomatoes, a few olives into a bowl and top with the marinated feta.
For the marinated feta, mix 1/4 cup olive oil with 4tbsn lemon juice, 2tbsn fresh oregano, 1tbsn fresh chopped mint and the zest of 1 lemon. Pour over 3 rounds of cubed feta and allow to marinade for 20-30 minutes.
Braai Broodjies: (for 4 sandwiches)
8 slices White bread
2 tomatoes, thinly sliced
As much mature cheddar as you want ( I like it super cheesy!)
1 large onion, thinly sliced
Salt & Pepper to taste
- Spread the bread with butter on both sides. Top with the sliced tomato, cheese and onion and season generously.
- Place the sandwiches on a braai grid and ‘toast’ over the fire until the bread is nicely toasted and the cheese is melted.
- Serve warm.
