Crostini with Biltong, Camembert and Caramelised onions
Even though I’m really enjoying the Soccer World Cup, we don’t really go to extremes with snacks during the games. IF we even have snacks it’s usually a bowl of popcorn or a packet of chips. Maybe some biltong if we’re feeling fancy. But seeing as Bafana is having quite a big day today, I thought we should have something special. And seeing as they’re playing the French, I thought, Why not draw some inspiration from both countries and make a yummy snack to enjoy during the game. I came up with these crostini’s by combining some of my favourite things. I love biltong (which South African doesn’t?), I adore Camembert and there are few things as yummy as caramelised onions. The plus side to this is that is so incredibly easy to make. If you don’t have the time to wait for the onions to caramelise, use some onion marmelade. I chose to caramelise the onions myself and an oopsie turned into something utterly delish. I added a bit too much sugar to my onions (I was impatient and wanted to have them brown and sticky faster) and it turned into actual onion caramel. I thought it was going to be a disaster but it was so good. The crunch it added actually made the whole thing so much better. So if you DO, do that, don’t worry, it’s still going to be great!
The quantities aren’t specific, add as much or as little of everything as you please.
1 Baguette, sliced into 1.5cm slices
1 Camembert, thinly sliced
a few handfuls of biltong
2 onions, thinly sliced and caramelised
- Preheat the grill of the oven.
- Drizzle the slices of baguette with some olive oil and place under the grill to toast slightly on each side.
- Remove from the oven and top with a few slices of camembert. Place back under the grill for the Camembert to melt slightly, remove from the oven and top with a few pieces of biltong and some of the caramelised onions.
- Serve immediately. A nice beer goes really well with this!
