These vanilla cake mix waffles are the ultimate easy treat. Served with a dollop of ice cream, fresh berries and drizzled with syrup they are any dessert lover’s dream.

So here’s something you might not know about me, I love a good boxed cake mix. Yes, of course I bake cakes from scratch but there are just times when you need the ease and efficiency of a good cake mix. Not to mention that they are fool-proof and can make anyone feel like a master baker.

Vanilla Cake Waffles

Most of the time I jazz up boxed/ pre-pack cake mixes with fresh fruit and my own buttercream but today is not that day. Today we are not even baking a cake with our cake mix. Today we are making waffles that are so good, I dare you to stop at only one.

 When the team from Golden Cloud asked me to come up with a spectacular recipe using their cake or muffin mix range I accepted without hesitation. Because I knew exactly what I was going to make. I’ve been wanting to make cake mix waffles for the longest time and guys, it was worth the wait.

 Vanilla Cake Waffles

Golden Cloud’s vanilla cake mix resulted in light, fluffy, perfectly golden waffles that just begged to be topped with a dollop of ice cream. That is the joy of their ready-to-mix range. These vanilla cake mix waffles are the ultimate easy treat. Served with a dollop of ice cream, fresh berries and drizzled with syrup they are any dessert lover’s dream.

Ingredients

  • 1 x Golden Cloud vanilla cake mix
  • 2 eggs
  • ½ cup vegetable oil
  • 1 cup milk

to serve

  • Vanilla ice cream
  • maple syrup
  • Fresh berries of your choice

Instructions

  • Combine the vanilla cake mix, eggs, oil and milk in a bowl and whisk until smooth.
  • Spray a waffle pan with cooking spray and ladle in the batter.
  • Close the waffle iron and allow to cook until the waffles are golden brown and cooked through.
  • Carefully remove the waffles.
  • Top with ice cream, syrup and berries and serve.

    I absolutely love brownies! I will use the cake mix (adjusted with a bit more butter, oil etc to get the brownie effect) to make blondies! With added white chocolate pieces and macadamian nuts, and maybe some cranberries, to cut the sweetnes!

    Red velvet waffles with a cream cheese/cream sort of concoction…I’ll figure it out when the time comes. lol. Though now I have to go and buy a waffle maker!

    I often use their cappuccino muffin mix to make tiramisu-inspired muffins topped with a white chocolate mascarpone icing. Yum!

    I recently made the Golden Cloud Orange and Ginger cake, and it was delicious. Next time I will use this mix to make individual upside-down orange cakes with a glacé ginger and orange syrup.
