Turkey BLT club sandwich with jalapeno mayo

Use your Thanksgiving leftovers to make this turkey BLT club sandwich with tangy jalapeno mayo. After all, what's better than a leftovers sandwich?

Ingredients

for the jalapeno mayo

  • 1 cup mayonnaise I used Hellmanns
  • 2 tablespoons pickled jalapenos finely chopped
  • 1-2 teaspoons lemon juice
  • salt to taste

for the sandwich

  • sliced bread of your choice toasted
  • leftover turkey sliced
  • crisp streaky bacon
  • lettuce
  • fresh tomatoes sliced

Instructions

  • To make the mayo, combine the ingredients and mix well.
  • To assemble the sandwich, spread the jalapeno mayo on a slice of bread then top with lettuce, tomato, turkey and bacon.
  • Top with another slice of bread and repeat. Close the sandwich with another jalapeno mayo-slathered slice of toast.
  • Cut in half and serve immediately.
