Bacon, egg and creamed spinach breakfast toast

Ingredients

for the creamed spinach

  • 1 tablespoon olive oil
  • 6 cups baby spinach washed and roughly chopped
  • 2 garlic cloves sliced
  • 2 tablespoons sour cream
  • squeeze of lemon juice to taste
  • salt & pepper to taste

to serve

  • toast of your choice
  • crispy streaky bacon
  • fried/poached egg

Instructions

  • Heat the oil in a large frying pan then add the baby spinach and garlic and allow to cook until the baby spinach has wilted.
  • Drain excess liquid then add the sour cream, lemon juice, salt and pepper and mix through.
  • Top the toast with a few spoonfuls of spinach, streaky bacon and a fried egg.
  • Serve immediately.
