Easy pork sausage meatballs in tomato sauce

Making pork sausage meatballs takes mere minutes and is so easy. This is the perfect comfy, cosy weeknight dinner recipe.

Ingredients

  • 500 g pork sausages/bangers
  • 1 red onion finely chopped
  • 2 garlic cloves finely chopped
  • 1 teaspoon dried thyme
  • 2 x 400g cans chopped tomatoes
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon sugar optional
  • salt & pepper to taste

to serve

  • cooked pasta of your choice

Instructions

  1. Cut the sausages open at one end and squeeze out the sausage meat into medium-sized meatballs. (I got 3 meatballs from each sausage).
  2. Form the meatballs with damp hands then fry in a hot frying pan with 2 tablespoons olive oil. Cook until golden brown then remove from the pan.
  3. Add the onion and garlic and cook until soft and fragrant then add the chopped tomatoes, thyme, vinegar and sugar.
  4. Cook for 5 minutes then add the meatballs back in and cook for a further 5-10 minutes until the meatballs are cooked through and the sauce has reduced slightly. (If the sauce seems too thick to begin with, add a splash of water).
  5. Season to taste and serve on top of cooked pasta.
