Grilled Caprese bruschetta
Grilled Caprese bruschetta is the perfect snack or starter to prepare on the braai and will impress the socks off of your guests. Gooey mozzarella, punchy basil pesto and charred vine tomatoes on crusty bread? Yes please!

- 4-6 slices ciabatta bread
- 200 g buffalo mozzarella fior di latte will also work
- vine tomatoes
- olive oil
- salt & pepper
- basil pesto
Drizzle the slices of ciabatta and tomatoes with olive oil and season with salt & pepper then place on the grill over hot coals. Grill until the bread is toasted on both sides and the tomatoes have started to blister. Keep an eye on the bread as it will burn quickly.
Pull the bread and tomatoes away from the heat then top the toasted bread with slices of mozzarella and allow to melt a little.
Remove from the braai then top with the tomatoes and drizzle with basil pesto.
