Shredded pork tacos with apple slaw and sour cream drizzle

for the slaw

  • 2 baby cabbages thinly sliced
  • 2 carrots julienned
  • 1 apple julienned
  • 2 tablespoons maple syrup
  • juice of 1 juicy lemon approximately 4 tablespoons
  • pinch of salt to taste

for the tacos

  • tortillas toasted/heated
  • cooked pork shredded
  • fresh chillies
  • sour cream seasoned with lime juice
  • fresh coriander


  • To make the slaw, combine all the ingredients in a bowl and mix well.
  • Re-heat the cooked pork (if using left-overs) in a hot pan until the edges are crisp and the pork is heated through.
  • To assemble the tacos, place a generous spoonful of the slaw in the center of the heated tortillas then top with the pork, a drizzle of sour cream, fresh chillies and coriander.
  • Serve immediately.
