To make the slaw, combine all the ingredients in a bowl and mix well.
Re-heat the cooked pork (if using left-overs) in a hot pan until the edges are crisp and the pork is heated through.
To assemble the tacos, place a generous spoonful of the slaw in the center of the heated tortillas then top with the pork, a drizzle of sour cream, fresh chillies and coriander.
