  • I used this doughnut recipe
  • oil for deep frying

for the glaze

  • 3 cups icing sugar
  • juice and zest of 1/2 lemon
  • 3-4 tablespoons boiling water


  1. Make the doughnut recipe as instructed then allow to rise for 2 hours.
  2. Roll out the dough and cut out the doughnuts to your preference. Place on a floured surface and cover with a damp tea towel and allow to rise for another hour.
  3. In the meantime, make the glaze. Combine all the ingredients in the bowl of a food processor and blend until smooth. Place in a jug and press a piece of cling wrap to the surface. This will prevent the glaze from forming a skin.
  4. Heat the oil in a large, deep frying pan then carefully fry the doughnuts until golden brown and cooked through.
  5. Remove from the oil and drain on kitchen paper before pouring over the glaze.
  6. Allow to cool then serve.
