Tomato salad with Basil dressing
Ripe tomatoes tossed in a pungent basil dressing. This tomato salad is so simple and absolutely delicious. The perfect side dish.

Ingredients
fresh tomatoes
I used a few punnets of mixed tomatoes from Woolworths
handful fresh basil leaves
1/2
t
salt
1/4
clove
garlic
juice of 1/2 lemon
a few tablespoons olive oil
pepper to taste
Instructions
Ensure the tomatoes are at room temperature.
Slice the tomatoes in half and place in a bowl.
To make the dressing, combine the basil, salt and garlic in a pestle and mortar and pound until you have a relatively smooth paste.
Add the lemon juice and olive oil.
Season to taste and drizzle over the tomatoes.
Toss to coat the tomatoes with the dressing and serve.
