Summer salad
A light, refreshing summer salad with fresh strawberries, nectarines, avocado and shaved chicken with tangy blue cheese to add creaminess.

Ingredients
Mixed salad leaves of your choice

avocados, cubed
2
cups
strawberries, hulled and sliced
200g/7oz
shaved chicken
4
nectarines, stone removed and sliced
For the dressing
4
tbsp
olive oil
2
tbsp
Balsamic vinegar
4
tbsp
orange juice
salt, to taste
pepper, to taste
Instructions
Scatter the salad leaves onto a large platter, followed by the salad ingredients. Crumble the blue cheese over.
Mix all the ingredients for the dressing and drizzle over the salad. Serve with crusty bread.
