500g (1lb)ripe tomatoes(use a variety of tomatoes for added flavor and texture)
1red onionfinely chopped
2tbspfresh basilfinely chopped
1tbspolive oil
1-2tspfresh lemon juice/Balsamic vinegar
salt and pepper to taste
For the bruschetta
4-8slices (depending on size)bread of your choice(sourdough, baguette, Italian or Tuscan bread all works well)
3tbspolive oil
1tbspbutter
1garlic clovehalved
Instructions
To make the tomato mixture, chop the tomatoes and onion then place in a mixing bowl.
Add the basil, olive oil and lemon juice then season to taste and mix well. Allow to stand for 10-20 minutes to allow the tomatoes to release some of their juices.
To make the bruschetta, brush the bread with olive oil and grill in a grill pan (or outdoor BBQ/Grill/Braai) until toasted on both sides.
Remove from the pan and rub with the garlic.
Top the toasted bread with the tomato mixture and serve.
