Easy tomato toast with whipped goat's cheese

Ingredients
For the whipped goat's cheese

tbsp
cream
100
g (3oz)
soft goat's cheese
salt and pepper
to taste
For the toast
4
slices
bread
2
large
tomatoes
sliced
3
tbsp
capers
rinsed
chopped chives
fresh basil
Instructions
In the bowl of a food processor, combine the goat's cheese, cream, salt and pepper then blend until smooth.
Heat a few tablespoons of oil in a small frying pan set over medium-high heat.
Once hot, add the drained capers and cook for a few minutes until crisp. Remove with a slotted spoon and allow to drain on paper towels.
Butter the bread generously on each side with butter then toast in a hot pan until golden brown and crisp on both sides.
Spread a dollop of goat's cheese on each slice of bread then top with sliced tomatoes.
Season with salt and pepper then top with the capers, finely chopped chives and fresh basil.
Serve immediately.
