Whisk the flour, baking powder and salt together in a large bowl. The baking powder is key to getting the chicken to crisp up in the oven.
Add the chicken and toss to coat, making sure each piece of chicken is completely coated with the flour.
Place the chicken on a wire rack set over a baking sheet then drizzle with a few tablespoons of oil.
Place in a hot oven and allow to bake for 15-20 minutes until golden brown then flip over and cook for another 10 minutes or until the chicken is golden brown all over and cooked through.
While the chicken is baking, make the buffalo sauce. Combine the hot sauce, butter, garlic powder and a pinch of salt in a small saucepan set over medium heat.
Allow to come to a simmer and stir to combine then remove from the heat.
Place the baked chicken into a large bowl then pour over the buffalo sauce (this recipe makes quite a lot of sauce so I keep some back to serve alongside the chicken for dipping) then toss to coat the chicken.
Serve sprinkled with chopped parsley or spring onion.
