Ingredients

fresh lemon juice

Alternatively use a whole chicken and cut it into pieces.

mushrooms

roughly chopped
fresh thyme sprigs

sour cream
Instructions
Preheat the oven to 180°C/350°F.
Mix together the olive oil, lemon juice, minced garlic, chilli flakes and fresh thyme.
Season the chicken on both sides with salt and pepper then place in a large sheet pan.
Add the mushrooms and chopped onion to the pan. Pour over the olive oil mixture. Add fresh thyme sprigs.
Place the pan in a preheated oven and bake for 45 minutes until the chicken is cooked through and golden brown.
Remove from the oven.
Remove the chicken from the pan.
Stir the sour cream into the pan juices and adjust seasoning if necessary.
Place the chicken back into the pan then bake for another 10 minutes then serve.
