Start by making the whipped feta. Combine feta cheese, a few tablespoons of olive oil and a generous pinch of black pepper in a blender.
Blend until smooth.
Using a spoon, spread the whipped feta onto a serving plate or bowl.
Peel the cucumber and chop roughly.
Slice the tomatoes into rough shapes and thinly slice the shallots.
Place the cucumber, tomato and shallots on top of the feta and drizzle with lemon juice, basil oil and a generous pinch of salt. Scatter over fresh basil leaves.
