Bacon, egg and creamed spinach breakfast toast
Quick and easy breakfast toast topped with luscious creamed spinach, crispy bacon and a sunny-side up fried egg is the perfect start to your day.

Ingredients
for the creamed spinach
1
tablespoon
olive oil
6
cups
baby spinach
washed and roughly chopped
2
garlic cloves
sliced
2
tablespoons
sour cream
squeeze of lemon juice
to taste
salt & pepper to taste
to serve
toast
of your choice
crispy streaky bacon
fried/poached egg
Instructions
Heat the oil in a large frying pan then add the baby spinach and garlic and allow to cook until the baby spinach has wilted.
Drain excess liquid then add the sour cream, lemon juice, salt and pepper and mix through.
Top the toast with a few spoonfuls of spinach, streaky bacon and a fried egg.
Serve immediately.
