½cupsun-dried tomatoes + 2 tbsp of the oil it comes in
¼cupblanched almonds
1-2garlic cloves
¼cupgrated Parmesan
½cupfresh basil leaves
½tspsalt
1-2tsplemon juice
3-4tbsp water (to thin the pesto out)
For the pasta salad
500g (1lb)cooked short pasta
4cupsbaby spinach
1cuppitted olives
1cupfeta cheesecubed
½cupsun-dried tomatoeschopped
2cupscherry tomatoeshalved
Instructions
To make the pesto: Combine all the ingredients, except for the water, in the bowl of a food processor and blend until smooth. Add 1 tbsp of water at a time until your desired consistency is reached.
To make the pasta salad: Combine the cooked pasta with the pesto, spinach, tomatoes, feta and olives. Season to taste and toss until well combined. Serve.
