Place the bacon in the Airfryer. Cook at 180ºC for 10 minutes or until the bacon is super crispy.
Remove the crispy bacon from the Airfryer and allow to cool. Once cooled, place the bacon in a food processor and blend until fine.
Combine the bacon, breadcrumbs, garlic, herbs, salt and pepper together and mix well.
Whisk the eggs into a bowl. In a separate bowl, add the flour and season with salt and pepper.
Coat the chicken first in the flour, then in the eggs and finally in the breadcrumbs. Press the breadcrumbs onto the surface of the chicken to make sure the chicken is well-coated.
Place the chicken breasts into the Airfryer, drizzle with olive oil and cook at 180ºC for 10 minutes until golden brown.
Carefully flip the chicken over and cook for another 3-5 minutes until the chicken is crisp, golden and cooked through.
Remove and allow to rest for 5 minutes then serve.
