This ham breakfast sandwich with egg and cheese is a great way to use Christmas leftovers and the perfect day-after-Christmas breakfast.

Ingredients

milk

leftover ham

Instructions
Whisk the eggs with the milk, salt and pepper.
Heat a large, non-stick pan over medium heat then add oil or butter. Pour in the eggs and add the chives.
Cover with a lid and cook until set. Once cooked, remove from the pan.
Cut in half to serve two people.
Toast the English muffins in a hot pan until golden then add warmed sliced leftover ham, cheese and egg. Serve immediately.
