Ingredients

melon
balled/cubed

prosciutto

g (10oz)
mozzarella / Bocconcini

arugula/rocket
For the dressing
¼

olive oil

lemon juice
salt and pepper
to taste
Instructions
Halve the melon then scoop out the seeds.
Using a melon baller, scoop balls of melon out and place in a bowl. Alternatively, chop the melon into cubes.
Whisk together the olive oil, lemon juice, salt and pepper.
Place a bed of arugula/rocket into a serving bowl then add the melon balls and mozzarella. Add the prosciutto.
Pour over the dressing and serve.
