This family-size ciabatta sandwich filled with salami, mozzarella and marinated eggplant is the perfect summer lunch recipe.

Ingredients

ciabatta bread

salami

g (7oz)
mozzarella
sliced

marinated eggplant

g (3oz)
roasted peppers

cups
rocket/arugula

cup
fresh basil
Instructions
Slice the bread in half with a sharp bread knife. Remove some of the bread from the top half (to make space for all the filling).
Drizzle with a little olive oil then toast in a hot pan/grill pan until golden brown.
Drizzle some of the marinated eggplant marinade onto the bottom piece of bread.
Top with salami, sliced mozzarella cheese, marinated eggplant, roasted red peppers, rocket/arugula and basil.
Drizzle more of the marinade over the greens then add the top piece of bread. Slice into portions and serve.
