Gnocchi with bacon, spinach and blue cheese

Ingredients

  • 250 g streaky bacon chopped
  • 1 cloves garlic thinly sliced
  • 200 g baby spinach washed and dried
  • 100 g blue cheese crumbled
  • 100 ml cream
  • 750 g gnocchi
  • salt & pepper to taste

Instructions

  • Bring a large pot of salted water to boiling point.
  • In a large frying pan, fry the bacon until golden brown then add the garlic and spinach and sauté for another 2-3 minutes until the spinach has wilted.
  • Cook the gnocchi in the boiling water until they float to the top then remove with a slotted spoon and add to the spinach and bacon.
  • Pour in the cream (or some of the cooking water) and crumble in the blue cheese.
  • Season to taste and serve immediately.
