Ingredients

g (1lb)
mushrooms
halved/sliced, depending on size

(2 squares/rounds)

fresh thyme

baby spinach

g (1lb)
pasta

cup
pasta water

tbsp
sour cream
(optional)

Instructions
Preheat the oven to 200°C/390°F.
Place the feta cheese, mushrooms and bacon in a casserole dish.
Drizzle with olive oil, add the garlic and thyme then season with salt and pepper.
Place in the oven and bake for 15-20 minutes until the mushrooms and bacon are cooked through and golden.
Add the spinach and bake for another 5 minutes.
While the feta is baking, bring a large pot of salted water to the boil. Cook the pasta for 10-12 minutes until cooked to your preference.
Reserve 1 cup of pasta cooking water and drain.
Mash the baked feta with a fork and mix to combine with the mushrooms, spinach and bacon.
Add the pasta, sour cream (if using) and a splash of the pasta water. Mix well, adding more water if necessary.
Adjust seasoning then serve topped with Parmesan.
