IngredientsÂ
- Feta. Use brined Greek feta for the best results. Goat cheese can also be used.
- Mushrooms. Any mushrooms will work.
- Bacon.Â
- Baby spinach.Â
- Garlic.Â
- Olive oil.
- Thyme
- Salt and black pepper.Â
- Pasta. Any short shape will work. Rigatoni, macaroni, penne, etc.
- Sour cream. (optional)
- Parmesan, to serve.
How to make baked feta pasta
The viral baked feta pasta recipe from TikTok is a great easy weeknight dinner recipe but I wanted to move away from the version made with cherry tomatoes and fresh basil leaves and  and use mushrooms, bacon and spinach instead. It’s still just as easy to put together and is guaranteed to be a family favorite.
- Bake the feta: Place the block of feta cheese, mushrooms and bacon in a baking dish. Drizzle with olive oil, add the garlic and thyme then season with salt and pepper. Place in the oven and bake for 15-20 minutes until the mushrooms and bacon are cooked through and golden. Add the spinach and bake for another 5 minutes.
- Cook the pasta: While the feta is baking, bring a large pot of salted water to the boil. Cook the pasta for 10-12 minutes until al dente. Reserve 1 cup of pasta cooking water and drain.
- Combine: Mash the baked feta with a fork and stir to combine with the mushrooms, spinach and bacon. Add the cooked pasta, sour cream (if using) and a splash of the pasta water. Mix well, adding more water if necessary. Taste and adjust seasoning then serve topped with Parmesan.

- 6 strips streaky bacon chopped
- 150 g (5 oz) feta cheese (2 squares/rounds)
- 2 garlic cloves crushed
- 2 tsp olive oil
- 2 tsp fresh thyme
- ½ tsp salt
- ½ tsp pepper
- 2 cups baby spinach
- 500 g (1lb) pasta
- 1 cup pasta water
- 2 tbsp sour cream (optional)
- Parmesan to serve
Instructions
- Preheat the oven to 200°C/390°F.
- Place the feta cheese, mushrooms and bacon in a casserole dish.
- Drizzle with olive oil, add the garlic and thyme then season with salt and pepper.
- Place in the oven and bake for 15-20 minutes until the mushrooms and bacon are cooked through and golden.
- Add the spinach and bake for another 5 minutes.Â
