- Feta. Use brined feta for the best results.
- Mushrooms. Any mushrooms will work.
- Bacon.
- Baby spinach.
- Garlic.
- Olive oil.
- Thyme
- Salt and pepper.
- Pasta. Any short shape will work.
- Sour cream. (optional)
- Parmesan, to serve.
How to make baked feta pasta
- Bake the feta: Place the feta cheese, mushrooms and bacon in a casserole dish. Drizzle with olive oil, add the garlic and thyme then season with salt and pepper. Place in the oven and bake for 15-20 minutes until the mushrooms and bacon are cooked through and golden. Add the spinach and bake for another 5 minutes.
- Cook the pasta: While the feta is baking, bring a large pot of salted water to the boil. Cook the pasta for 10-12 minutes until cooked to your preference. Reserve 1 cup of pasta cooking water and drain.
- Combine: Mash the baked feta with a fork and mix to combine with the mushrooms, spinach and bacon. Add the pasta, sour cream (if using) and a splash of the pasta water. Mix well, adding more water if necessary. Adjust seasoning then serve topped with Parmesan.
