Easy Baked Feta Pasta with bacon and mushrooms

This easy baked feta pasta with bacon, mushrooms and spinach is a delicious dinner recipe, ready in 30 minutes and requires minimal effort from you.

Easy Baked Feta Pasta with Mushrooms and Spinach

Ingredients

Full recipe and amounts can be found in the recipe card below. 

  • Feta. Use brined feta for the best results.
  • Mushrooms. Any mushrooms will work.
  • Bacon. 
  • Baby spinach. 
  • Garlic. 
  • Olive oil.
  • Thyme
  • Salt and pepper. 
  • Pasta. Any short shape will work.
  • Sour cream. (optional)
  • Parmesan, to serve.

How to make baked feta pasta

  1. Bake the feta: Place the feta cheese, mushrooms and bacon in a casserole dish. Drizzle with olive oil, add the garlic and thyme then season with salt and pepper. Place in the oven and bake for 15-20 minutes until the mushrooms and bacon are cooked through and golden. Add the spinach and bake for another 5 minutes.
  2. Cook the pasta: While the feta is baking, bring a large pot of salted water to the boil. Cook the pasta for 10-12 minutes until cooked to your preference. Reserve 1 cup of pasta cooking water and drain.
  3. Combine: Mash the baked feta with a fork and mix to combine with the mushrooms, spinach and bacon. Add the pasta, sour cream (if using) and a splash of the pasta water. Mix well, adding more water if necessary. Adjust seasoning then serve topped with Parmesan.

Ingredients

  • 500 g (1lb) mushrooms halved/sliced, depending on size
  • 6 strips streaky bacon chopped
  • 150 g (5 oz) feta cheese (2 squares/rounds)
  • 2 garlic cloves crushed
  • 2 tsp olive oil
  • 2 tsp fresh thyme
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cups baby spinach
  • 500 g (1lb) pasta
  • 1 cup pasta water
  • 2 tbsp sour cream (optional)
  • Parmesan to serve

Instructions

  • Preheat the oven to 200°C/390°F.
  • Place the feta cheese, mushrooms and bacon in a casserole dish.
  • Drizzle with olive oil, add the garlic and thyme then season with salt and pepper.
  • Place in the oven and bake for 15-20 minutes until the mushrooms and bacon are cooked through and golden.
  • Add the spinach and bake for another 5 minutes. 
  • While the feta is baking, bring a large pot of salted water to the boil. Cook the pasta for 10-12 minutes until cooked to your preference.

  • Mash the baked feta with a fork and mix to combine with the mushrooms, spinach and bacon.
