If you're using whole butternut squash, carefully peel with a vegetable peeler then halve the butternut squash with a sharp knife and scoop out the seeds using a tablespoon. Chop into bite-size pieces.
Place the cut butternut squash cubes into a large bowl then pour over the oil and sprinkle over the seasoning.
Toss to coat the squash.
Transfer the seasoned butternut to the air fryer basket in a single layer and air fry butternut squash for 20-25 minutes at 375°F/190°C, tossing halfway through cooking, until the squash is fork tender and caramelized around the edges.
Remove from the air fryer then serve.
I scattered crispy fried sage leaves over the air-fried butternut squash but other herbs like chopped fresh parsley is also a good garnish.
