Ingredients

English cucumber

tomatoes
or 4 cups of cherry tomatoes

large red onion

Greek feta cheese

pitted olives
for the lemon vinaigrette
1-2
lemons

tbsp
olive oil
salt & black pepper to taste
Instructions
Chop the cucumber, tomatoes, onion, olives and feta into small cubes and combine in a bowl.
To make the dressing, combine all the ingredients and mix well.
When you are ready to serve, pour the dressing over the salad and mix well.
Garnish with parsley (optional) and serve.
