Preheat the oven to 500°F/250°C and place a griddle pan on the highest rack in the oven.
Pat the pork chops dry with paper towels then drizzle with olive oil.
Mix together the spices then sprinkle the dry rub over the pork chops, coating both sides.
Carefully place the pork chops on the pre-heated pan and broil for 2-3 minutes per side (depending on thickness) until the pork chops are golden brown, juicy and tender.
Remove from the oven and allow to rest for 5 minutes before serving.
