Easy beef mince curry served over golden turmeric rice. Affordable, flavorful and on the table in about 30 minutes. A weeknight winner for the whole family.
Add the rinsed rice to a small pot set over medium-high heat. Add the turmeric, salt and water then bring to a boil. Cook until the water has been absorbed then reduce the heat to the lowest setting, cover and allow to steam for 5 minutes. Turn off the heat and allow to steam while you cook the curry. Fluff the rice right before serving.
To make the curry, sauté the onion in a splash of oil in a large, deep pan set over medium-high heat.
Once softened, add the garlic and spices and cook for another 30 seconds.
Add the beef and break up with a wooden spoon, cooking until the meat has browned.
Add the chopped tomatoes, stir in and cook for 5 minutes then pour in the beef stock and add the potatoes.
Season with a generous pinch of salt then cover, reduce the heat and allow to cook for 15-20 minutes or until the potatoes are fork tender and the sauce has reduced slightly.
Taste and adjust seasoning by adding more salt, pepper and some sugar.
Serve the curry over the turmeric rice with a dollop of chutney.
