Cube the chicken into bite-sized pieces then set aside.
Place the flour and panko in separate bowls then season each with a teaspoon of salt, half a teaspoon of garlic powder and a pinch of pepper.
Whisk the eggs into a third bowl.
Coat the chicken bites first in the flour, then in egg and finally in the bread crumbs.
Place the chicken pieces in a single layer in the air fryer basket then drizzle or spray with oil.
Cook the chicken at 200°C /400°F for 15 minutes, flipping over half way, until crisp and golden.
In the meantime, make the honey garlic sauce.
Combine the sesame oil, crushed garlic, honey, soy sauce, sweet chilli sauce, water mixed with a tablespoon of cornstarch in a small saucepan set over medium heat.
Bring to a simmer and allow to cook for a few minutes until thickened slightly. Season with salt and a squeeze of lemon.
Once the chicken is cooked, remove from the air fryer and place in a large bowl.
Pour over the sauce and toss to coat then serve immediately topped with sesame seeds and green onion/chives (optional).
