Place the beans in a large bowl then add the water. Cover with plastic wrap and allow to soak for 10-12 hours.
Set your Instant Pot to the sauté function then add the chopped bacon.
Cook until crisp and golden then remove from the pot and set aside.
Add the onions, garlic and spices and cook for a few minutes until fragrant then add the drained, soaked beans, ketchup, bbq sauce, brown sugar and beef stock.
Add the bacon back in then cover with the lid.
Make sure the vent is in the sealing position then cook on high pressure for 30 minutes. Quick release the pressure.
If the liquid is too thin, set the Instant Pot back to the sauté function and allow the beans to simmer for 5-10 minutes until the liquid has reduced and thickened slightly. Serve.

IF USING CANNED BEANS: Drain the beans then add to the pot with the crispy bacon and other ingredients. You'll only need 1 cup of stock. Cook on high pressure for 5 minutes then quick release pressure and simmer on the sauté function until the liquid has reduced and thickened.
