These viral
baked dumplings
are a one-pan weeknight wonder and so easy to make. Saucy broth and frozen dumplings combine into the ultimate quick cozy comfort meal.

Ingredients

oz (400g)
coconut milk
3
tbsp
Thai red curry paste
¼
cup
soy sauce

tbsp
rice vinegar
3
garlic cloves
minced

tsp
minced ginger
salt
to taste

lb (500g)
frozen dumplings / potstickers
approximately 20 dumplings
To serve
chopped green onions/spring onions
sliced chillies
optional
chilli oil / chilli crisp
Instructions
Preheat the oven to 350°F/180°C.
Whisk together the coconut milk, red curry paste, soy sauce, rice vinegar, ginger and garlic. Taste and adjust seasoning if necessary.
Pour into an oven-safe dish. The dish I used is 13x10in/34x27cm.
Nestle the frozen dumplings into the curry sauce and cover with foil.
Bake for 15 minutes until the dumplings are cooked through.
Scatter over garnishes and drizzle with chilli oil then serve.
