Halve the passion fruit (if using fresh), scoop out the seeds and add to a saucepan.
Add the sugar and water.
Bring the mixture up to a simmer over medium heat then allow to cook for 10 minutes until the sugar has dissolved and the syrup has thickened slightly. Pour the mixture through a sieve - I like to add a few spoonfuls of the seeds back to the syrup for prettier end result but this is optional.
Allow the syrup to cool completely then transfer to glass jars or a jug and place in the refrigerator.
To serve, pour ¼-⅓ cup of the passion fruit syrup over ice then top with water (still or sparkling will both be delicious).For a cocktail: Pour the syrup over ice, add a shot of vodka, tequila or rum then top with sparkling water or club soda and garnish with fresh mint and a lemon slice.
