Ingredients
500
g (1lb)
boneless, skinless chicken thighs
sliced into bite-size chunks

tsp
salt

sesame oil
For the sauce

tsp
sesame oil

tsp
ginger
crushed

garlic cloves
crushed/minced

hoisin sauce
¼
cup
soy sauce

tbsp
rice vinegar

tbsp
mirin

water

sugar

cornstarch
Instructions
Cube the chicken into bite-sized pieces then transfer to a mixing bowl.
Add sesame oil and season with salt. Mix well.
Heat a large pan or skillet over medium-high heat. Cook the chicken until golden brown on all sides then remove from the pan and set aside.
To make the sauce, mix the soy sauce, Hoisin sauce, rice vinegar, mirin, sugar, water and cornstarch together.
In the same pan you cooked the chicken in, add the rest of the sesame oil, the ginger and the garlic.
Saute for a few seconds then pour in the sauce.
Cook until the sauce has thickened then add the chicken and any of its resting juices back into the pan.
Cook for a few minutes until glossy and the chicken is cooked through.
Serve the chicken and sauce over rice (or noodles) with greens of your choice.
Scatter with sliced chillies and cilantro/coriander (or sliced spring onions) and serve.
