How to make sticky garlic chicken

  1. Cook the chicken: Cube the chicken into bite-sized pieces then transfer to a mixing bowl. Add sesame oil and season with salt. Mix well. Cook the chicken in a hot pan or skillet until golden brown on all sides then remove from the pan and set aside.
  2. Make the sauce: Mix the soy sauce, Hoisin sauce, rice vinegar, mirin, sugar and cornstarch together. In the same pan you cooked the chicken in, add the rest of the sesame oil, the ginger and the garlic. Saute for a few seconds then pour in the sauce. Cook until the sauce has thickened then add the chicken and any of its resting juices back into the pan. Cook for a few minutes until glossy and the chicken is cooked through.
  3. Serve: Serve the chicken and sauce over rice (or noodles) with greens of your choice. Scatter with sliced chillies and cilantro/coriander (or sliced spring onions) and serve.

  1. Seared a few pieces of halibut and made this sauce, served over rice with some spicy green beans with hoisin and it was amazing. I will try it next time as written with chicken, but the sauce alone is so darn good. Thank you!
