Berry Meringue Ice Cream Pie

Ingredients
For the crust
250
g (½lb)
oat cookies
crushed
3
tbsp
melted butter
pinch of salt
For the filling
1
liter (1qt)
vanilla ice cream
softened
1
cup
berry sauce
1½
cups
berries
chopped
1
cup
meringue
roughly chopped
Instructions
Mix the crushed oat cookies, butter and salt together.
Press into the bottom of a springform cake pan. Place into the freezer and allow to set for 10 minutes.
Place the softened ice cream into a large mixing bowl. Add the berry sauce, chopped berries and meringue.
Fold together, taking care not to mix the sauce in completely to allow a marbled look.
Press a piece of parchment paper onto the surface of the pie.
Place the pie in the freezer and allow to freeze for at least 2 hours but up to 2 months.
When ready to serve, remove the pie from the freezer. Top with whipped cream, meringues and berries. Slice and serve.
