Berry Meringue Ice Cream Pie

- Oat cookies.
- Butter.
- Salt.
- Vanilla ice cream.
- Berry sauce.
- Berries. I used strawberries and blueberries but raspberries or blackberries would work well too.
- Meringue. I used store-bought mini meringues.
How to make an ice cream pie
- Make the crust: Mix the crushed oat cookies, butter and salt together. Press into the bottom of a springform cake pan. Place into the freezer and allow to set for 10 minutes.
- Make the filling: Place the softened ice cream into a large mixing bowl. Add the berry sauce, chopped berries and meringue. Fold together, taking care not to mix the sauce in completely to allow a marbled look.
- Allow to freeze: Press a piece of parchment paper onto the surface of the pie. Place the pie in the freezer and allow to freeze for at least 2 hours but up to 2 months.
- Serve: When ready to serve, remove the pie from the freezer. Top with whipped cream, meringues and berries. Slice and serve.

- 3 tbsp melted butter
- pinch of salt
For the filling
- 1 liter (1qt) vanilla ice cream softened
- 1 cup berry sauce
- 1½ cups berries chopped
- 1 cup meringue roughly chopped
