Ingredients

chicken thighs
1-2
tbsp
olive oil

garlic cloves
crushed

white wine
(substitute with chicken stock)

g (14oz)
cherry tomatoes

g (3oz)
pitted Kalamata Olives

tbsp
capers
handful
fresh basil
salt and black pepper
to taste
Instructions
Preheat the oven to 200°C/390°F.
Pat the chicken dry with paper towels then drizzle with a few teaspoons of olive oil.
Season generously with salt and pepper.
Place the chicken, skin-side down, in a large, oven-proof pan or skillet set over medium heat.
Allow the chicken to brown for 10 minutes then remove from the pan.
Add the garlic to the pan and cook for a few seconds then pour in the white wine.
Add the browned chicken back to the pan then add the tomatoes, olives, capers and fresh basil.
Place in a hot oven and allow to bake for 15-20 minutes until the chicken is cooked and the tomatoes are soft.
Remove from the oven, scatter over fresh parsley or more basil and serve.
