Ingredients needed
- Chicken. I used bone-in chicken thighs but boneless chicken can also be used. Cooking times will just need to be adjusted as de-boned chicken cooks faster.
- Tomatoes. I used fresh cherry tomatoes but use any ripe tomatoes you have.
- Olives. I used pitted Kalamata olives.
- Capers.
- Extra-virgin olive oil.
- Fresh garlic cloves.
- Salt and black pepper.
- White wine. Chicken stock can be substituted.
- Fresh basil.
How to make Mediterranean Chicken
- Brown the chicken: Pat the chicken dry with paper towels then drizzle with a few teaspoons of olive oil. Season generously with salt and pepper. Place the chicken, skin-side down, in a large, oven-proof pan or skillet set over medium heat. Allow the chicken to brown for 10 minutes then remove from the pan. Add the garlic to the pan and cook for a few seconds then pour in the white wine.
- Bake: Add the browned chicken back to the pan then add the tomatoes, olives, capers and fresh basil. Place in a hot oven and allow to bake for 15-20 minutes until the chicken is cooked and the tomatoes are soft.
- Serve: Remove from the oven, scatter over fresh parsley or more basil and serve.

This is a great one-pan recipe that is delicious served as is for an easy, simple meal. If you’d like to add side dishes, roasted potatoes, a simple salad or crusty bread will be delicious.
