Nutella S’mores Bars

These ooey gooey s’mores bars with layers of Nutella, mini marshmallows, chocolate chips and buttery cookie dough are an irresistible treat for adults and kids alike and perfect when you need to take dessert to a pot luck or barbecue.

Ingredients needed

  • For the cookie dough: Butter (I used salted but unsalted butter can be substituted), soft brown sugar, eggs, flour, baking powder, salt, vanilla extract.
  • Nutella. Nutella is the perfect filling for these s’mores bars but you can use peanut butter instead, if preferred.
  • Mini marshmallows. Marshmallow fluff/Marshmallow creme can also be used.
  • Chocolate chips/chocolate chunks. I used milk chocolate chips but dark chocolate or bitter sweet chocolate can be substituted.

How to make s’mores bars (summary)

  1. Make the cookie dough: Beat the room temperature butter and sugar together in the bowl of a stand mixer fitted with a paddle attachment (or use a large bowl and a hand mixer) until light and fluffy. Scrape the sides of the bowl down with a rubber spatula once or twice while beating to make sure everything is incorporated. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla then add the dry ingredients and mix until just combined.
  2. Assemble the s’mores bars: Line a square baking dish (20cm x 20cm / 7in x 7in) with parchment paper. Press in three quarters of the cookie dough mixture, making sure the dough is even all the way around the pan. Add the Nutella and spread over the cookie dough. Top with mini marshmallows and chocolate chips. Add dollops of the remaining cookie dough to the top, allowing the marshmallows and chocolate to peak through.
  3. Bake: Bake the bars in a preheated oven until golden brown and cooked through. Remove from the oven and allow to cool for 20-30 minutes before slicing with a sharp knife and serving. Slicing tip: The marshmallow will stick to the knife so wipe it down with a wet cloth or rinse under hot water in between each slice.

Can I make these ahead?

These smores bars can be made up to 2 days in advance and kept in an airtight container at room temperature. They are fantastic served warm and can be warmed in a hot oven for a few minutes before serving.

  • 250 g (2 sticks) butter softened
  • 250 g (1 cup) soft brown sugar

  • 375 g (3 cups) flour
  • 2 tsp baking powder
  • 1 tsp salt

  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 180°C/350°F and line a 20cm x 20cm / 7in x 7in square baking dish with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar together until light and fluffy. Scrape the sides of the bowl down with a spatula once or twice while beating to allow everything to incorporate properly.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla.
  • Whisk the flour, baking powder and salt together.
  • Add the dry ingredients and mix until just combined.
  • Press three quarters of the cookie dough mixture into the prepared baking dish.
  • Add the Nutella and spread over the cookie dough.
  • Top with mini marshmallows and chocolate chips. Add dollops of the remaining cookie dough to the top, allowing the marshmallows and chocolate to peak through.
  • Bake the bars in a preheated oven for 20-25 minutes until golden brown and cooked through.
  • Remove from the oven and allow to cool for 20-30 minutes before slicing into 16 bars with a sharp knife and serving. 
  • Slicing tip: The marshmallow will stick to the knife so wipe it down with a wet cloth or rinse under hot water in between each slice.
